How should I store the Cherry Concentrate?

Why do I notice variances in color between batches of Tart Montmorency Cherry Concentrate?
Although the cherries in Immunotec'sTart Montmorency Cherry Concentrateare harvested at their peak, variances in taste and color can occur. And since the Cherry Concentrate has no coloring agents or sweeteners, these variances may be noticeable in the product. It is not abnormal for the product color to darken with time. This is a natural process and in no way affects the efficacy of the product.
Please explain some of the terms associated with Cherry Concentrate:
  • ORAC units: Oxygen Radical Absorbance Capacity is a widely-used testing method which measures the antioxidant activity or capability of a food ingredient. The higher the measurement, the better the ORAC value.
  • Anthocyanins: Chemicals which help to protect the plant from UV damage. In humans, anthocyanins have powerful antioxidant properties and are known to be effective in inhibiting the COX enzyme which can produce a feeling of discomfort by irritating nerve endings.
  • Cyanidin: A particular type of anthocyanin; it gives the cherry its red color.
  • Melatonin: A hormone secreted from the pineal gland. Its concentration in the blood varies following a daily cycle. The maximum concentration occurs in the night, triggering sleepiness, with the minimal concentration around noon. Tart cherries, specifically the Montmorency variety, contain an extremely significant quantity of melatonin, enough to produce positive results in the body
  • Low Glycemic Index: Low Glycemic Index foods have a slow and steady impact on blood sugar levels.
  • COX enzyme: COX enzymes speed up your body's production of hormone-like substances called prostaglandins. Prostaglandins cause a feeling of discomfort by irritating your nerve endings; they are also part of the system that helps your body control temperature.
